Salad for 4 serves


  • 1 cup of shredded green papaya
  • 1 cup of shredded carrots
  • 1 bunch of shredded garden radish
  • 10 dried apricots
  • 1 tsp. of chili flakes,
  • 1 piece of grated ginger
  • 10 tbsp. of lemon juice
  • 4 tbsp. of olive oil
  • 1 tbsp. of mustard
  • 1 tsp. of brown sugar
  • 10 peppermint leaves
  • 10 oregano leaves
  • 0.5 tsp. of salt,
  • 1 dash of black pepper
  • 0.5 tsp. of Jamaica pepper powder
  • 1 tsp. of lemon rind
  • 0.5 cup of rocket salad.


Simply combine all the ingredients  and add one avocado in slices on top. Garnish with sprouts and pomegranate seeds.
