To make strawberry kisses, cut tarte flambee dough in pieces, use a pastry wheel. Bake in oven for 8-10 minutes at 240°C or 475°F until golden. When finished cool on wire rack.

Cut one cup of strawberries in slices. Marinate with lemon juice, lemon rind, sugar and a hint of cardamom powder. Place the remaining ones in a jar. Add 1-2 tbsp. of sugar, 2 tbsp. of lemon juice and a dash of black pepper. Blend them.

Place one slice of silk bean curd on top of each rectangle. Dust them with sugar, cinnamon and cardamom powder. Prepare the next layer with strawberry slices. Sprinkle them with strawberry sauce. Garnish with whipped soy cream, kumquats slices, lemon rind and peppermint leaves. If available, top with caramelized almond slivers.

Tip: Use alternatively pizza dough. If so, roll the dough very thin out.

Fruits: Berries: 2-3 cups strawberries, 2 organic lemons, 10 kumquats

Milk: 1 cup whipped soy cream Nuts: Caramelized almonds, if not available use plain almonds Bean

Curd: 100 g or 3.5 oz. silk bean curd Spices

Sugar: 6 tbsp. sugar, a dash black pepper, cardamom powder, cinnamon

Herbs: 1 bunch peppermint
