- Pancake :
- 1 1/3 cup all purpose flour
- 3 tsp baking powder
- 2 eggs
- 2 tbsp sugar
- 1 cup milk
- 2 tbsp cooking oil
- pinch of salt
- 350 ml whipping cream
- 3 tbsp honey
- 15 strawberries, cut into quarter
Cream : Prepare whipping cream and honey in a medium bowl. Beat together until stiff peaks are nearly formed. Chill until ready to use.
Pancake : Sift the flour, baking powder and salt into a large bowl. In a separate bowl, lightly whisk together milk, egg and oil. Pour the milk mixture into the flour mixture. Stir just until moistened, don’t worry about a few lumps. Let the batter stand for 30 minutes.
In a hot pan or flat grill, brush butter over cooking surface and ladle batter onto the hot pan for each pancake. When large bubbles form on the surface, flip over and cook until lightly golden on the otherside. Repeat with remaining batter.
Layer pancakes with large scoops of whipped cream and strawberries.
