Vegetarian Pasta

Try this delicious vegetarian pasta recipe, perfect for the summer.

Ingredient list serves four:
Vegetables: 8 carrots, 1 turnip cabbage, 3 onions, 3 garden leeks all chopped
Pasta: 500 g pasta square shaped
Oil: 9 tbsp. olive oil, 2 tbsp. fennel oil
Spices: Salt, black pepper
Herbs: 1 bunch chervil

Directions:

Chop vegetables. Place them in a non-sticking frying pan. Add olive oil. Simmer for 5 minutes or until soft. Bring salt water to the boil. Add pasta and 3 tbsp. of olive oil. Cook on medium heat for 3-4 minutes or until al dente. Drain pasta. Place them in the same pan as the vegetables. Sprinkle with fennel oil. Season the ingredients to taste with salt and black pepper. Simmer on low heat for another 2 minutes.

Place on plates. Garnish with herbs.
